Bastian Hospitality Launches INKA: A Peruvian Asian Restaurant in Mumbai

INKA, Bastian Hospitality's first Peruvian Asian restaurant, has opened in Mumbai. INKA is a 6000-square-foot restaurant with 200 seats in Mumbai's Lower Parel location. It has an outside mezzanine level that's perfect for beverages before or after dinner.

Peruvian-born Chef Kinyo Rodas Tristan, who has demonstrated his culinary skills in kitchens all over the world, is in charge of INKA's kitchen. Peruvian Asian meals prepared with real, high-quality ingredients from Peru and around the world are on the menu at INKA.

Several dishes that experiment with molecular gastronomy—using ingredients like fire, dry ice, and nitrogen to create distinctive table-side experiences—are the product of an adventurous spirit and a focus on immersive dining.

Like all restaurants under the Bastian brand, INKA's interiors are eye-catching as soon as guests enter. An emphasis on a variety of patterns throughout the venue creates layered depth, and unusual visual elements like the backlit bar, enormous floor lamps that nearly reach the ceiling, purposefully mismatched chairs at each dining table, and the liberal use of sculptures all combine to create a gloriously maximalist vibe. The space was designed by Minal Chopra of ineedspace, the group's longtime restaurant designer.

INKA has a high-end cocktail bar that focuses on contemporary mixology and drinks made with flair and drama. Under the direction of Argentine mixologist Dario Araujo, the bar serves a variety of Latin traditional drinks with an Asian twist. Cocktails are made with ingredients like Szechuan pepper, coconut, cardamom, and black pepper. The main options are daiquiris, margaritas, martinis, and pisco sours, each of which is made with a carefully considered mixology.

Three categories make up the menu: Bosque (forest), Montana (mountains), and Mar (ocean). Starters from the Mar section, such as Inti Smoked Tiradito, Hamachi, red chilli oil, chalaquita, chulpe, coriander, and tiger milk; Montana offerings, such as Mushroom Salvaje, which includes fresh shiitake, king oyster, anticuchera, huancafna, and tomato chimichurri; and Buta Kushi, which consists of 48-hour pork belly, miso, white sesame, spring onion, and yamasa sauce, comprise a wide and genuinely distinctive selection of dishes. Palta Guacamole, avocado, tomato, white onion, coriander, green lime, tiger milk, habanero chile, and quinoa crackers are examples of appetizers with a bosque flavor. Ceviches such eggplant and Alphonso variants are also available.

Commenting on the launch, Ranjit Bindra, Founder & CEO, Bastian Hospitality said, “Inka is what we hope will be another in a series of Bastian Hospitality fine dining offerings, providing high octane glamour and excellent food & beverage to our discerning diners. BIGGUYS to Launch 150 Cloud Kitchens by 2030, Aiming for ₹72 Crore Revenue Surge

With an ambitious development strategy, BIGGUYS, the fastest-growing domestic chicken QSR chain in India, is making a revolutionary entry into the cloud kitchen market. By 2030, the company plans to open 150 cloud kitchens, further demonstrating its dedication to quick scalability and widespread availability.

BigGuys is expanding its cloud kitchen deployment in response to the growing demand for reasonably priced, premium chicken QSR options. By 2025, the company plans to have 50 cloud kitchens operational, which is estimated to bring in ₹24 crore. The company estimates that its network of 150 cloud kitchens would generate ₹72 crore in revenue by 2030.

“Cloud kitchens are the future of India’s QSR industry,” said Biraja Rout, Founder, BIGGUYS. “This model allows us to expand aggressively while keeping costs lean, ensuring that our signature flavors reach millions without the constraints of heavy real estate investments. We are not just following a trend - we are building the next wave of QSR growth in India.”

With the help of BIGGUYS' cloud kitchen strategy, the company hopes to expand rapidly without incurring the costs associated with traditional brick and mortar businesses by further entering Tier 1, Tier 2, and developing Tier 3 markets. A digital-first, asset-light strategy has put BIGGUYS in a strong position to take control of the rapidly changing Indian QSR market.

By providing premium products, easy accessibility, and an omnichannel strategy that serves both dine-in and delivery customers, the brand hopes to completely transform how Indians enjoy chicken QSR. This growth move is in line with that goal.

Jumboking Set to Enter 7 New Cities in 2025, Eyes Global Markets
Jumboking Set to Enter 7 New Cities in 2025, Eyes Global Markets

Jumboking which has their presence in 185 locations is currently the biggest domestic burger chain. The brand is set to enter 7 new cities and eyes for global expansion. Jumboking's strategy of expanding into fewer markets appears to be benefiting the company.

"Delhi will allow us to have up to 300 stores, but Mumbai is a market with at least 250."The Founder and MD, Dheeraj Gupta, confirms that part of our expansion ambitions is to grow a mile deep and an inch wide.

The company plans to build up its presence from five to twelve cities in 2025 as part of its national expansion strategy. In five cities—Mumbai, Delhi, Hyderabad, Bangalore, and Pune—we are present. We have 700–800 stores in these five cities. In 2025, the brand will be adding 12-24 stores in each of these cities.

“We have invested significantly in recruiting the right team, ramping up our internal systems and processes and are now ready to foray into a total of 12 cities this year. In addition to where the brand is already present, we will expand to Chennai, Ahmedabad, Indore, Jaipur, Chandigarh, Lucknow and Kolkata,” said Dheeraj Gupta, MD of Jumboking.

According to the company, it is preferable to reach the 1000 store milestone by having 12 locations rather than dispersing throughout 200 cities nationwide. In the QSR industry, supply chain and marketing economies of scale are crucial.

In order to grow its franchise network, Jumboking is collaborating with local business owners to target transportation hubs with heavy foot traffic. The brand developed a new model with little seats that has a lot of potential in the second half of 2024 in addition to its pure takeaway models.

Overall, on the expansion front, the brands focus remains:
•    Franchise success first
•    Doubling systemwide sales every 2-3 years over the next 5-6 years

The key contributors to revenue growth in 2025 are expected to be
•    New Store Openings: With 50 new stores planned for the calendar year, additional revenue streams from high-traffic locations will be significant.
•    Online Sales: The company is targeting a 30% increase in online orders, which currently contribute approximately 20% of its total revenue.
•    Enhancing Same-Store Sales Growth (SSSG): This will be to the tune of 7-10% growth by introducing menu innovations, leveraging technology to drive personalized customer experiences and conducting localized marketing campaigns to boost footfall.
•    Expanding to Dubai and Singapore metro systems towards Q4

“We have been receiving queries for a while now, chiefly from Dubai and Asia,” confirms Dheeraj Gupta, Founder of Jumboking. “We have developed significant expertise in catering to the needs of metro travellers in India. We believe that we can add significant value to similar customers in Dubai and SE Asian markets as well.”

Jumboking launched its JK Burger Rewards reward program in 2023, and it currently boasts the highest redemption rate in the QSR sector. This enables the brand to get a head start in new areas. The user-friendly JK mobile app, which is being enhanced to enable users to track new deals and redeem rewards, serves as the operational foundation for the loyalty program. Furthermore, the foundation of the brand's service delivery is JK University, which was established during COVID. The company delivers advanced training modules on operations, marketing, and customer engagement, as well as data-driven insights to help franchisees enhance their companies. It serves as a service enabler for the franchisees.

“For restaurant owners, food delivery platforms have long been an essential part of our business model. Hence, I urge every restaurant owner to join WAAYU and seize this opportunity to take control of their business," said Ajay Pai, President of the Belagavi Association.

Waayu aims to expand its operations to additional cities in Karnataka and other Indian states, therefore this growth represents a key milestone for the company. John Abraham-Backed 'NOTO Ice Cream' Raises ₹15 Crore in Funding Round Led by Inflection Point Ventures
John Abraham-Backed 'NOTO Ice Cream' Raises ₹15 Crore in Funding Round Led by Inflection Point Ventures

Leading guilt-free ice cream company, 'NOTO Ice Cream' has raised ₹15 crore in its most recent funding round, which was led by Inflection Point Ventures (IPV) and included Lets Venture and JITO. The money will go toward growing into Tier 1 and Tier 2 cities, introducing novel summertime flavors and formats, assisting with marketing on quick-commerce and food-tech aggregators, improving infrastructure, and increasing brand recognition through experiences.

NOTO Ice Cream was established in 2019 and has since upended the ice cream market by providing decadent, healthful ice cream options without sacrificing flavor. It is a popular option for people who are health-conscious due to its creative flavors and formats as well as its emphasis on better substitutes like low-calorie, low-sugar ice creams. "Eating, Not Cheating” is the brand’s motto.

Renowned individuals like Kunal Bahl, Rannvijay Singha, and John Abraham also support the brand because they share NOTO's goal of enabling guilt-free pleasure for everyone.

Varun Sheth, a chef and seasoned businessman with a wealth of hotel industry experience, and Ashni Shah, a fashion and design lover with a background in marketing and operations, co-founded NOTO.

Vinay Bansal, Co-Founder, Inflection Point Ventures, says, “Health-conscious consumers often struggle between satisfying their sweet cravings and adhering to a healthier lifestyle. The existing options often compromise on taste or nutritional value, creating a gap in the market for truly guilt-free indulgence. NOTO ice-cream is solving this problem with its unique flavours that don't compromise on either taste or nutritional values. At IPV, we are drawn to the startup’s commitment to address a real consumer need. Their vision to redefine desserts aligns with lots of Indians, making it a scalable startup with meaningful impact.”

By 2032, the Indian ice cream market is expected to have grown from its 2023 valuation of ₹228.6 billion to ₹956 billion. Higher disposable incomes and the growing use of rapid commerce platforms are driving the market's transition toward premium, healthful, and inventive ice cream products, which is expected to see substantial development. NOTO is actively entering new markets in Ahmedabad, Kolkata, and Lucknow in addition to operating in several cities, including Mumbai, Delhi, Bangalore, Hyderabad, Chennai, and Pune. In addition to rapid commerce sites like Zepto, Blinkit, Instamart, and Flipkart, the brand is listed on meal delivery services like Swiggy and Zomato.

Commenting on the same, Varun Sheth, Co-Founder & CEO, NOTO notes, “At NOTO, Eating, Not Cheating is at the heart of everything we do - we serve desserts that are guilt-free and full of flavor. This funding fuels our expansion into Tier 1 and Tier 2 cities, paves the way for more NOTO-riously good innovations. As we continue to redefine the ice cream experience, we’re excited to scale new heights. We appreciate IPV’s support in this journey.”

Third Eye Distillery Enters the Whiskey Market with Otherside Subcontinental Whiskey
Third Eye Distillery Enters the Whiskey Market with Otherside Subcontinental Whiskey

When Stranger & Sons Gin was named one of the top 8 gins in the world and won a Gold Outstanding medal at the 2020 IWSC (UK), it was evident that the time had come for Indian spirits to become the main attraction on the world spirits scene. Additionally, the year saw a significant "gin revolution" and a push for the premiumization of spirits in India, with Stranger & Sons leading the charge. Third Eye Distillery is aiming after whiskey, the biggest spirits category in India, after spearheading the growth of gin in the country with the launch of 'Otherside Whiskey.'

Otherside Whiskey embraces the extremes of the country, where unrelenting heat, monsoons, and changing seasons produce a whiskey with depth, intensity, and a distinct identity. It was born in the center of the subcontinent and aged throughout India's tropical belt. The Solera Finish, a painstaking procedure that adds depth and complexity to a single expression, elevates this whiskey's unique taste in charred ex-bourbon barrels.

Using malts that are produced and aged solely in India, Otherside whiskey is a blended Indian whiskey. It offers a fresh take on an ageless spirit and breaks the monotony of scotch and scotch-like products by capturing the robust character of this terrain. This isn't Bourbon, it's not Scotch, and it's definitely not normal.

"Whiskey is a crowded room," says Rahul Mehra, CEO and Co-founder of Third Eye Distillery. “The impact of our climate, geography, and aging environment makes this a whiskey that can only come from here, redefining India's provenance in whiskey making. For too long, Scots have set rules for whiskey and it's about time India starts writing its own story. We have taken the time to create a whiskey that truly puts India front and centre—not just in name, but in representation. Otherside Whiskey isn't about labels or legacy—India isn’t just ready to lead in whiskey, it’s time we stopped following altogether.” he added.
